Nước Mắm

Nuoc Mam, aka fish sauce, is a staple of Vietnamese cooking. It has a very fishy (surprise!) and salty taste. It can be used both as an element in the cooking process and as a condiment (this condiment dipping sauce is not the same though!)

In its pure form, as it would be used for the cooking process, fish sauce looks like this:

Thit Kho: Take 1

I love thit kho – Vietnamese caramelized pork. It’s one of those “everyday” dishes that Vietnamese households serve for dinner all the time – but certainly, when one moves away from home, it becomes even more extraordinary. My aunt made it for my cousin and me and I tried to copy her at home with mixed results.
